wanted to make the filling a day ahead. should I wait to beat in the egg whites until ready to assemble the tarts?

These were a huge hit at the party I threw. I definitely think making the shells is important vs. buying the premade ones. It was not hard to brush on melted butter and sprinkle cheese. The butter and parmesean between the layers add to the dish. I definitely flung this together and had I been more mindful of what I was doing I would have whipped the egg whites with a hand mixer not my giant kitchen-aid. There wasn't enough to be whipped up properly. My guests however didn't seem to notice a thing. I will definitely be making these again and again.

I also used the pre-made phyllo shells, and they were ok. I think making the cups per the recipe would turn out better. Next time, I will greatly reduce or omit the lemon. It overpowered the goat cheese!

The phyllo cups were wonderful but the filling lacked flavor and the lemon was a little too overpowering. However, they were pretty good with alot of parmesean melted on top into a golden crust.

Elaine, thanks for the tip to use the premade phyllo shells. There they are, staring me in the face in the freezer case and I never thought of it.

Nice idea. Needs some more spicing (garlic and onions - add some powdered. I just used the pre-made phyllo cups and it made it super-easy. Add some chopped water chestnuts for some extra crunch!

I really don't like goat cheese but this recipe is so good, I didn't mind it at all.
