    I love goat cheese with fresh beets, so next time I'd like to try adding a cube of fresh cooked beet on top as a garnish.

    I don't have a mini muffin pan so I made 12 regular muffin size tarts. They took a few minutes longer to bake, but were very tasty. Everyone loved them.
