Sweet and Sour Chicken

Ingredients
  • 2 tablespoons vegetable oil
  • 2 boneless chicken breasts, sliced into strips
  • Salt and pepper
  • 1/2 cup chopped red pepper
  • 4 teaspoons cornstarch, mixed with 4 teaspoons water
  • 1 cup canned pineapple chunks, drained with 1/2 cup reserved juice
  • 3 tablespoons light brown sugar
  • 3 tablespoons rice wine vinegar
  • 1/4 cup chicken stock
  • 1/2 cup chopped green pepper
Directions

In a large non-stick skillet, heat oil over medium high heat. Season chicken strips and add to pan. Brown chicken and remove to plate. Add red and green peppers and cook for 1 minute. Stir in pineapple chunks, juice, sugar, vinegar and chicken stock and bring to a simmer. Simmer until sauce begins to reduce. Stir in cornstarch mixture and bring liquid to a simmer. Stir in chicken strips and cook for 5 minutes. Serve over rice.

I lightly floured the chicken, with flour, salt, pepper and one teaspoon of crushed red pepper flakes. the pan fried them to a golden brown, then along with the peppers I added green onions. Next time I want to add an additional veggie, like carrot straws or broccoli. It is more like a spicy sweet and sour chicken. We ate it up, will need to make again. I would suggest cooking the peppers a little longer,as they were a little tough to chew (thats to my taste). Well to be honest it doesn't look anything like the photo. I did everything as said but...Ok. we just ate and my hubby liked it but said it would have been better if the chicken breasts were fried. This was a fast, easy, and delicious recipe!!! I added fresh garlic, carrots, and asparagus to the recipe and added some maraschino cherry juice for color. My whole family loved it! Great starter recipe. My Chinese mother uses fruit cocktail (not pineapple) to make the sauce, and coats the chicken with a batter of cornstarch and flour before frying in peanut oil. I added more pineapple, made more sauce by adding another tablespoon each of vinegar, brown sugar and cornstarch plus another 1/4C. of chicken stock. I also steamed/cooked 1 cup of baby carrots and 1 C broccoli in the microwave. I cooked 1 whole onion and 2 bell peppers (red and yellow) in a very large skillet along with the 2 large chicken breasts that I thinly sliced into bite size pieces. Just before the chicken is done add the sauce mixture along with the microwaved veggies. This made enough to have left overs for another night... This recipe very good and a must try. I didn't take the meat out of the pan. I actually used pork instead of chicken but used all the other ingredients. I also cooked the meat a little and then added the peppers to tender them. This is a really tasty and easy recipe to make. I did add orange juice to my sauce mix and a bit of orange zest. Also used all red, yellow and orange peppers, since that's all I had on hand. I try many recipes although not many of them do I make over again-this one's a keeper. I make this dish for my family pretty frequently and they love it. I made a few changes to the recipe that makes a nice subtle difference. Try frying fresh ginger and garlic with the chicken and the peppers. It gives it a much more authentic flavor! At first I was reluctant to try this recipe since there was no breading for the chicken but after completing the prep and letting the dish stand for a few minutes before serving, I enjoyed the most delicious sweet and sour flavor. Once I can manage an impromptu batter for the breading I will probably never order this dish at a restaurant again. Often times, take out S&S can have a bittersweet aftertaste that almost reminds me of corn syrup, this dish has a rich combination of light sweet flavor and citrus tanginess. Best S&S I've had. Super yummy! Everyone was so surprised it was so good and quick to make. Everyone had seconds so don't plan on the "i'll take some for lunch tomorrow" It won't happen. Just a quick tip, if you want to add broccoli (I did, it give it a nice flavor/crunch Cook the broccoli in boiling water for 2 minutes and then just mix it in with the sauce right before serving and viola! I likedthis recipe, only i would change the cooking time on the veggies by 3 minutes depending on how tender you want them to be., My peppers wasn't as tender as I would have liked them to be, so that's why I suggest a longer cooking time on them. In response to "Sunny California": If you made the cornstarch slurry and added it a bit at a time, which is standard technique with cornstarch, you're better able to control the viscosity of the sauce. This recipe was unbelievably easy...It was so tasty and I followed it to a T with some of my own ideas. I also marinated my chicken in a mixture of soy sauce and garlic and rolled it in cornstarch and fried it some beforehand for some added texture...it was so crispy and soaked up the sauce. I've made this recipe a lot over the years. Other than adding a tiny bit of sliced onions or shallots, I don't deviate from the recipe. There is a nice balance of sweet and sour. To finish the dish, I serve it over rice made with chicken stock instead of water. Be warned that if you're used to the battered chicken and radioactive red sauce you usually find in Chinese food restaurants, you're in for a change here. The chicken, if cooked properly, should be moist and browned. The sauce will take on the color of the brown sugar. My family and friends have always looked forward to the results of this recipe. It has a wonderful flavor that truly deserves five stars. Looking at the "review" below mine, I must ask that people not use this area to comment on the show, host, or a recipe you haven't made. While the Food Network doesn't have forums for opinions, this certainly isn't the area to post what you think about an untried recipe. Yeah this does deserve it's 5 stars. Granted it's not breaded and fried and the sauce isn't as sticky as Chinese food S&S chicken, BUT it's really tasty in its own right. I really haven't found much to add or take away from this because it works so well. Onions, I did add some onions. I'm sure you could easily do this with pork or shrimp as well. This has great flavor.
