Sweet and Sour Chicken

Ingredients
  • 2 tablespoons vegetable oil
  • 2 boneless chicken breasts, sliced into strips
  • Salt and pepper
  • 1/2 cup chopped red pepper
  • 4 teaspoons cornstarch, mixed with 4 teaspoons water
  • 1 cup canned pineapple chunks, drained with 1/2 cup reserved juice
  • 3 tablespoons light brown sugar
  • 3 tablespoons rice wine vinegar
  • 1/4 cup chicken stock
  • 1/2 cup chopped green pepper
Directions

In a large non-stick skillet, heat oil over medium high heat. Season chicken strips and add to pan. Brown chicken and remove to plate. Add red and green peppers and cook for 1 minute. Stir in pineapple chunks, juice, sugar, vinegar and chicken stock and bring to a simmer. Simmer until sauce begins to reduce. Stir in cornstarch mixture and bring liquid to a simmer. Stir in chicken strips and cook for 5 minutes. Serve over rice.

I lightly floured the chicken, with flour, salt, pepper and one teaspoon of crushed red pepper flakes. the pan fried them to a golden brown, then along with the peppers I added green onions. Next time I want to add an additional veggie, like carrot straws or broccoli. It is more like a spicy sweet and sour chicken. We ate it up, will need to make again. I would suggest cooking the peppers a little longer,as they were a little tough to chew (thats to my taste). My family at least the boys like some heat into their meals, so adding the red pepper flakes made this one a keeper. item not reviewed by moderator and published

Well to be honest it doesn't look anything like the photo. I did everything as said but...Ok. we just ate and my hubby liked it but said it would have been better if the chicken breasts were fried. This was a fast, easy, and delicious recipe!!! I added fresh garlic, carrots, and asparagus to the recipe and added some maraschino cherry juice for color. My whole family loved it! I am glad I doubled the recipe so I have leftovers for lunch. This is a keeper. I also used boneless skinless thighs instead of breasts. I will be making this every time I get the urge for Chinese.
