These were very good and my kids loved them. I have made them twice already. Since my family is not big the sugar, the first time I made them, I used about a third of the recommended amount of sugar. The second time, I added honey instead and then drizzled them with a little bit of pure maple syrup. It was delicious both ways. A nice alternative to pancakes.

These were so easy and delicious - everyone loved them. The pancakes come out very light - I was worried about having trouble flipping them - they didn't stick at all and were so easy to flip. And my family immediately came up with many different fillings - including vegetables, chicken etc - far beyond a sweet cheese blintz.

i will definitely make these again.

We sauteed apples with a little cinnamon and sugar to use over the top -they were good this way or without a sauce at all.

i made 1 and 1/3 the recipe and ended up with 12 blintzes.

Made these last night and will make again tomorrow morning! They are super-easy to make and taste great. I use a bit less sugar with the cottage cheese, but that is because I'm cutting down on sugar. As a matter of fact I am going to make these for my co-workers too! Thanks for a GREAT recipe!!!!
