I also had to post a review in rebuttal to the "Bobby Flay can't cook" idiot below. Come on, if you're going to take the time to review a recipe, at least prove to us that you made it! Like the other review, I became a fan of this dish at La Mesa Grill years ago, and am thrilled to see it here! It has great taste, and to make it easier I've made the following adjustments. I use frozen sweet potato fries sauteed instead of sweet potatoes and rotisserie chicken instead of poaching chicken. Next time I will use the Knor holliandaise mix instead of making my own...I'm not very good at that. I would give it 5 stars if I could figure out how to make the patties stick together!!

This a rebuttal of sorts to Anonymous, but I've been meaning to review this recipe anyway. As a matter of fact, I'm doing this now because I just brought the recipe up to double-check since I'm making it today. After the first time I had it at Mesa Grill, I promptly came home and logged on here to find it. It is now in the rotation here on a regular basis. One thing I really like about it is that it lends itself to tweaking very well.

The one thing I always do that's different is I grill or pan-fry the chicken rather than poaching it, just because I prefer the flavor and texture.
