    WOW! My family doesn't like sweet potatoes so I used white russet potatoes instead. I shredded them and squeezed the excess water out of them by twisting them in a dish towel and made the recipe as stated. THEY WERE AMAZING!! This is a definite keeper recipe. My husband doesn't like sour cream so I served the sauce on the side of the potatoes and he loved it. I also made grilled bacon wrapped shrimp to serve for dinner and the sauce made a great dip for the shrimp! My whole family loved the potatoes and the sauce.

    These were GREAT! I didn't have fresh jalapeno, so I used some jarred roasted jalapenos, which worked great. Also had some store-bought, very spicy, cilantro-lime salsa on hand so I added that to the sour cream, and some extra lime juice.

    We eat sweet potatoes often, and this was a nice, new and fun way to have them. Will definitely make them again. Much faster, too, than waiting for them to cook in the oven.

    I made these tonight and they were super easy. We love sweet potato fries so we decided to try these. They were so delicious! I did add an extra jalapeno b/c my husband likes HOT stuff. He said that I could add another one next time I made them. The recipe makes a LOT of these cakes so if you're only cooking for two, definitely half the recipe!

    My son saw these on Paula yesterday...said can we make these tomorrow. He made them and fried them in my cast iron skillet...THEY WERE AWESOME! Very easy to make and tasted wonderful. He said this is a KEEPER! So it was definately good!
