These cupcakes are awesomely delicious!! Loved the subtle flavor of the sweet potato and so moist. I cut the recipe in half since there's only 2 of us. I think I had 10 cupcakes. The frosting is so buttery delicious I could eat it with a spoon. Love that cider flavor!

The frosting was my favorite part, fluffy and just the right amount of cider. I did not put the cider in the refigerator at all. I let it get to room temperature, then mixed it in with the whipped butter. I had no problems at all with neither texture nor taste. The cupcake was very moist. I will definetely make this for the fall.

I found the cider reduction awful. For me the directions for the reduction must have been off. I couldn't get rid of the vinegar taste. I am throwing all the cupcakes out. Ugh!

These cupcakes are AMAZING--very flavorful and not too sweet. We did have an issue with the reduction, though. It completely hardened in the fridge, and after we re-melted it, it hardened again when mixed in with the butter. We ended up having to throw out the reduction (which was heartbreaking and just using the butter and marshmallow creme. Surprisingly, our "messed-up" frosting still turned out great, but I would love to actually use the reduction next time because it smelled so wonderful!

Cake was ok. More muffin like. Not super flavorful.
Frosting had WAYYY too much butter. It had the mouth feel of butter....Cider reduction was AMAZING

This cupcake is the *BOMB*! The explosion of flavors are amazing. The frosting does not overpower the cupcake. You taste the sweet potato and cider and then the frosting comes in to play and all you can say is MMMMMM. Everyone that tasted it had nothing but praise. This is a keeper. A must try.

I made these cupcakes for my cousins bridal shower..HUGE SUCESS! Very moist and one of the best cupcake textures I have ever had. AMAZING cupcakes! Easy to follow directions and so nice to have something other than choc or red velvet. Will be making them again for the fall bake sale and thanksgiving!

The cake recipe is perfect and is delicious eaten alone. I would use it mostly for a Fall recipe because of the flavors. The cider reduction should be made first since it has to cool for 3 hours. I put mine in the freezer to speed things along but I believe this was part of the problem with the icing. When I mixed the cider reduction with the butter, the texture became more like cottage cheese. I went ahead and added the marshmallow cream but it was still a mess. I went ahead and used it as a topping for the cupcake but it’s not very appealing to the eye, although it still tastes good. The cider reduction is an awesome recipe but I believe it should have been thicker. I ended up making a hole in the center of the cupcake and put a tsp. of the cider reduction down inside the cupcake. Also, if you don’t have unsalted butter, then do not salt the pecans. My butter was salted so the nuts were a little over the top. All in all, a great recipe that I will try again in the Fall.

I thought, overall, the flavor of this cupcake was very good. It reminds me of a spice cake or pumpkin bread. The frosting was light and delicious and the caramel cider reduction made it taste so good. And they're really lovely looking cupcakes too! Mine looked just like the ones on Cupcake Wars. It is fairly involved, so give yourself enough time. I also think the baking time recommended is too long. I would test them at around 18 mins. I would definitely make these cupcakes again.

Absolutely loved this cupcake, even tho it was more work than I am used to for a dessert. I'm just starting to try 'scratch' and unusual recipes, and this was a great start. Especially loved the frosting, not too sweet and great apple cider touch. Really enjoying working 'out of the box;!
