Sweet Potato (Yam) Pie

Ingredients
  • 1 unbaked pie crust, recipe follows*
  • 1 1/2 cups cooked, peeled and mashed sweet potatoes
  • 1 heaping teaspoon all-purpose flour
  • 1 cup milk (canned, half and half, cream or whole milk)
  • 1 cup sugar
  • 3 egg yolks
  • 1 teaspoon vanilla
  • 1 teaspoon ground nutmeg
  • 2 tablespoons margarine, melted
  • Pie Crust (recipe for 4 pie crusts):
  • 4 cups all-purpose flour
  • 1 3/4 cups shortening (butter flavored)
  • 2 teaspoons salt
  • 1 tablespoon sugar
  • 1 large egg
  • 1/2 cup water
  • 1 tablespoon white vinegar
Directions

Preheat oven to 350 degrees F.

Roll out 1 pie crust and place it in a pie plate. Mix all of the remaining ingredients together and pour into the unbaked pie crust. Bake for 45 minutes or until pie is firm. Allow to cool completely.

*Note: This filling is for 1 pie crust. The remaining 3 crusts can be used for other pies or frozen.

Pie Crust (recipe for 4 pie crusts):

4 cups all-purpose flour

1 3/4 cups shortening (butter flavored)

2 teaspoons salt

1 tablespoon sugar

1 large egg

1/2 cup water

1 tablespoon white vinegar

Mix flour, shortening, salt and sugar together with a pastry blender until well blended. Slightly beat egg, water and vinegar together with a whisk and pour over the well blended flour mixture. Mix all ingredients together with a fork. Divide crust into 4 equal parts. Roll each with a rolling pin and place into 4 pie pans. Flute edges of crust.

Yield: 4 pie crusts

    This was delicious. I adjusted the recipe to make 2 pies and added 1 cup of evaporated milk(sweet) with 1 cup of whole milk so with that and the 2 cups of sugar it was just sweet enough. I also had to cook a bit longer than 45 minutes (cooked 1 hour) but it was perfect - texture and flavor. Will definitely use again.
    Found this to be a little bland.
    I am not a sweet potato/yam fan so I was skeptical of how it might taste but once I tasted it I thought this was so close to pumpkin pie (which is my favorite) that it blew me away. Easy pie to put together. I did have to cook it a little longer than 45 minutes, but the instructions mentioned extra time may be needed.
    That pie ios wonderful! I served it for Christmas and my family went wild for it
    Oh My Gosh, so good. The best ever. I used a short cut. Instead of fresh sweet potatoes I used 2 - 20oz cans. Heat the sweet potatoes and the syrup they are in, then drain before mashing. Follow the recipe and use 4 egg yolks not 3. For the milk use a 12oz can of Evaporated. Make sure your nutmeg isn't old. New spices make a difference.
    Found this recipe quite by accident. Have prepared it several times for different groups. I am always asked for recipe.
