Our family loves these. The double frying method ensures that the fries are crispy if (1 you get the temperatures correct, (2 do not crowd the fries while they are cooking, and (3 allow the fries to cool between the fryings. My kids love the spicy seasoning mix. Although my children generally dislike sweet potato fries at restaurants, they love these fries. My son even asks to have them made on his birthday.

These were super easy and very tasty. A great side dish with salmon and an asian-inspired cole slaw. Mine turned out a little greasy and not super crispy, but I don't have a fryer and I didn't measure the oil temp. with a thermometer, so I think it was just my error on that one. I think the spice blend would also be good on roasted sweet potatoes, for a lower calorie dish. But the fried option is quicker and can mostly be done ahead.
