    It takes a lot to please the hungry masses of any fire department, mine is no exception. This one did the trick, my only problem is now I don't know how I'm gonna top it. Enjoy

    I made this gumbo last night and I think it?s absolutely great. It has a very full, decadently rich flavor (balanced perfectly with some plain white rice and just the right amount of heat from the cayenne. Keep in mind, however, that this is not an easy recipe to make. You?ll *need* a cast iron pan to make the roux properly, and there is really no down time. You?ll be stirring and whisking from start to end. Is it worth it? Absolutely.

    I always wanted to make Gumbo and I tried this recipe and it turned out fantastic. I was a little worried at first because I'm not a great cook, but it went super!
