I cooked this dish last week and it was amazing! I used boneless, skinless chicken breasts, added cilantro to the marinade, and used red curry rather than yellow, along with adding coconut milk to the dipping sauce. It was delicious! My family and I are big fans of Thai cuisine and this was a big hit! The dipping sauce is a must though! But I always have to add my own touches! This is a #1 on the scale and a great summer dish that is VERY easy to make.

Made this past weekend - I used boneless chicken breast instead of quarterd. I too did not have a pestle and used food processer instead - I also used the enitre can of cocunut milk because mine with only half looked extremely yellow. Marinated overnight and tasted awesome!! Made the dipping sauce too and it was great - tasted a lot like General Tso's sauce.

This is one of the most delicious chicken recipes I have ever eaten. Be sure and make it with the dipping sauce, that tops the dish! I didn't use a mortar and pestle, I just combine the marinade in a food processor. It worked great!

I prepared this the night before as instructed and it was amazing! I always have plenty of fish sauce on hand, but not this time. I substituted rice wine vinegar because I was in a pinch, but I will be sure to get fish sauce for next time. My husband and I L O V E D this! It?s our new favorite chicken recipe!
