Ingredients
- 3 1/2 pounds hamburger
- 2 eggs
- 1 cup oatmeal
- 1 small onion, diced
- 1 small green pepper, diced
- 1/2 cup ketchup
- 1 1/2 cups beef broth
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
Directions
Preheat the oven to 350 degrees F.
Mix all ingredients well. Place in a laof pan and bake for 1 1/2 hours.

I tried this recipe out 'with a bit of a twist' and was told by my fiance' that it was the BEST meatloaf he had honestly had. It turned out moist and flavorful indeed! My 'twist'..? In addition to cutting portion in half again to 2/4 servings, I substituted the oatmeal with my own garlic flavored croutons and added combo ketchup/bbq sauce in the mixture as well as glazed the top for last 10/15 min. YUM!

I've made this meatloaf several times ... there is one baking in the oven right now. It is easy and love the fact that I always have all the ingredients at home. It is moist and flavorful.
