The feta chesse was a great added flavor! I love cheese and these quesadillas were tasty. I added grilled chicken to about half. They only take a few minutes to grill once all the mixture is prepared. i ate them for breakfast the next day, too!

This is tasty and EASY. The recipe makes a lot of filling, so cut it in half if it's just for two, or you'll be making a lot of quesadillas. These can be frozen and reheated in an oven or even toaster oven. Make great snacks!

I made these for a Sunday brunch party and everyone really liked them. I did however make the mistake of using 2 tortillas per quesadilla instead of 1 and folding it in half. This proved to be very messy since the contents of the quesadillas are soggy. I also had a LOT of leftover filling.
