Ingredients
- 1 ounce salad oil
- 2 (5 to 8-ounce) catfish fillets
- 2 ounces fish blackening seasoning
Directions
Heat a 12-inch cast iron skillet over high heat. When the skillet is hot, add the oil. Season both sides of each catfish fillet with the blackening seasoning and place in skillet. Cook fillets for 5 minutes on each side.

This dish was sooo easy to do. The cajun blackening seasoning I used gave a good "kick" to the fish. I don't think I used as much as was called for; I just sprinkled each side generously until completely coated. My boyfriend & I think it could've used some lime or lemon juice after frying it. I also used veggie oil, since I wasn't quite sure what salad oil was. Excellent for a first time catfish-fry!
