Blackened Salmon Hushpuppies

Ingredients

  • 4 eggs
  • 2 cups onion, grated
  • 1 1/3 tablespoons lemon juice
  • 1 1/2 teaspoons black pepper
  • 4 tablespoons parsley chopped
  • 1/2 cup milk
  • 1 1/2 teaspoons salt
  • 1 1/2 cups jalapenos, chopped
  • 8 cups rice, cooked
  • 3 pieces blackened salmon
  • Flour, for coating
  • 6 eggs beaten
  • Bread crumbs
  • Oil, for deep frying

Directions

Beat 4 eggs, add all ingredients except salmon. Flake salmon with fork and mix into rice mixture. Let stand for at least 30 minutes. Using an ice cream scoop, form into balls and dip in flour, dip in egg, dip into bread crumbs and let stand for 30 minutes before cooking. Heat oil to 350 degrees. Fry the hushpuppies until golden brown.
