I have been using this recipe (with a few modifications of my own for at 5 years. It is the most requested recipe I make. My kids absolutely love it. I dont do the breadcrumbs on top, I just cover top with additonal cheese, it makes a wonderful crust. I also either use a little cajun seasoning or use salt, pepper and garlic in the milk and egg mixture instead of the cayenne pepper.

I had the recipe at Chef Joe Randall's cooking school in Savannah, GA. I also made it at home this week. One thing I would say is he actually used Colby cheese and at least 3 cups, when he made it for us. I think he also used more parmesan cheese that advised in this recipe. I made it the way he did (3 C. colby cheese in the macaroni and 1/2 c. parmesan cheese added to the bread crumb topping. It was excellent!

I just finished making it now and it tastes a bit bland to me. I wish I would've read more of the comments thoroughly for suggestions. It definitely needs more cheese and seasoning (not necessarily the ones in the recipe to it. I would also use less breadcrumbs next time. Other than that, it was okay. I will try the recipe again with changes.

Made this for Easter and it was SUCH a hit. It's tremendously easier to make than some recipes that call for making a cheese sauce, and it's just as delicious. This will be my "go to" recipe for Mac and Cheese from now on.

I make this for all the pot lucks and family dinners now. I've been using this recipe for 5 years now. I add Old Bay to this recipe for a little more flavor. This Mac and Cheese is so yummy. Its hard for me to eat other people's Mac and cheese after this one. My husband always tells me that my mac and cheese is the best, so thank you Chef Joe.

I've served this recipe to friends and they loved it - but I added a small can of mild chopped green chiles to the middle layer of cheese before adding the top layer of macaroni. I also used veggie twisted pasta and low fat shredded Mexican cheese blend - fast and easy and absolutely delicious!

I made a few adj's to this recipe, I add Velveeta to the Evap Milk & Butter Rue. I Use Panko Bread crumps instead of regular ones and I add a lot of Paprika and Cayenne to the Crumb mix. I also use about 20-30% more Sharp Cheddar and I always use block cheese instead of pre-shredded. And when I'm layering the Cheese I add Smoked Gouda for extra flavor. It always comes out delicious and has everyone begging for the recipe. Highly recommended:
