    Absolutely too long on the greens, mushy. I prefer a good rusty looking ham hock like we got in Chicago but they dont have those in Atlanta, plus my husband doesnt eat pork, so a rusty looking smoked turkey is good. Rusty means deeply smoked, not nasty. The less water, the better, concentrated likker is better. Spice it up with onions and red pepper.

    This is a very very good collard green recipe. The smoked turkey is a wonderful substitute for the ususal ham hock. I did add a bit of sugar though for flavor.
