    This cake was absolutely amazing!! It was soooo incredably delicious!! My only problem with it was that it had to rest in the cupboard for a day before icing or eatting- a task very difficult when the house smells like carrot cake. I don't know if this is possible, but this cake was almost too moist, a problem no other cake I know of has ever tackled. Overall, it tastes beyond amazing so don't even look at it if you're on a diet.
