I also saw the arctic char at Whole Foods and remember seeing it on Top Chef a few seasons back. This recipe was wonderful and easy. Char has gotta be the easiest fish I've found to do a pan sear on both sides and it comes out perfectly. The sauce is delicious. I'm on a diet, so no rice, I made roasted asparagus and the sauce is excellent drizzled across the fish and asparagus, kind of like a hollandaise with a subtle orange acidity to it. (I also cut the cream and used some low fat milk the second time around, just as lovely.

I came across acrtic char at Whole Foods one afternoon and decided to try it, and then found this recipe online.
It turned out to be delicious and easy. It's a great recipe for a small dinner party.

This recipe was elegant and the flavors were subtle and went incredibly well together.
I love Arctic Char and I was surprised how much I liked the orange flavors with this dish.
