These potato pancakes are delicious!! The only thing I would tell people who have never made or never saw someone make them, is to take a cheese cloth or old clean dish towel and drain out the excess amounts of liquid that the potatoes and the onions produce. Squeeze it until it barely drips, then add the eggs, flour, salt, and pepper. That should help with the raw or mushy inside.

These ended up being hard and like... hard, thick, gooey hash browns. I love hash browns, and I love potato pancakes, I do not like these. I will not make these again. I guess I will keep searching for my grandma's old German recipe!

I too have been looking for years my Mother's german potato pancake recipe. I don't know if this is it. But it is the closest I have found. Easy to make and we love it !! I didn't have any problems with crispness, just covered them to keep the spatter of the oil down. I will make this again.

They fried nicely on the outside but werer raw on the inside. Tried frying longer on lower temp, came out oily and saugy. Hated it.

i have been looking for a recipe like this for quite some time, to match the potato pancakes i remember from growing up in a german family. this is it!! i found they cook through a lot better if you cover them in the pan, and they also turn out more even in a nonstick pan. we eat them with heaps of applesauce, a great breakfast for my toddler!
