Ingredients
- 3 1/2 pounds ground chuck (80 percent lean, 20 percent fat)
- 1/3 cup grated Parmesan
- 1/3 cup bread crumbs
- 3/4 cups diced yellow onion
- 1/3 cup chopped flat-leaf parsley
- 2 eggs
- 1/3 cup tomato ketchup
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground black pepper
Directions
Preheat oven to 350 degrees F.
Line a 12 by 8 by 6-inch loaf pan with waxed paper and set aside.
In a large bowl, mix together all ingredients until just combined. Press mixture gently into loaf pan. Press down on meat with an offset spatula to remove any air pockets. Bake for 45 to 60 minutes or until fully cooked through.

For being a meatloaf made with a lot of meat, this was a moist meatloaf. It was very flavorful and is great as leftovers the next day as well. I would recommend reheating in the oven though, the microwave gives it a weird taste.
