Ingredients
- 3 large eggs
- 1 1/2 cups sugar
- 3 cups milk
- 1 tablespoon vanilla
- 7 slices Texas Toast
- 6 ounces melted butter
- Cinnamon, for garnish
Directions
Preheat oven to 350 degrees F. Cream eggs and sugar together. Add milk and vanilla and mix well. Add Texas Toast. Let bread soak in liquid mixture until very soft. Press until all bread is soaked in the liquid mixture. Add butter and mix well.
Pour into a well-oiled 8 by 8-inch baking pan. Bake for 45 minutes to 1 hour. Mixture will rise like a souffle. When golden brown, remove from oven and let rest for 15 minutes before serving.

I do not like Texas toast and had some old, stale cinnamon coated cake donuts that I was going to throw out but decided to use for this recipe instead. I had 8 donuts and I baked it for a little over 1 hr instead as well. Oh god it was so good. I am eating a bowl right now. I have never made bread pudding before but I will again. Even my picky 8 yr old and 4 yr old love this recipe.

I've seen bread pudding enough on "Chopped" I wanted to try a simple, basic recipe. This one didn't disappoint. Since it was a trial, I cut everything by 1/3 and baked it for 30 min. Would still have been enough for 2-3 people, depending on how much dessert they wanted. Didn't have any Texas Toast on hand, but I figured two slices of regular bread for each 1 slice of Texas Toast would work. Just on a whim, I subbed half the sugar with brown sugar, uncompressed. The recipe never mentioned when to add to the cinnamon as garnish, so I did it before baking. The whole thing was just plain yummy and easy to make. When I have a sweet tooth, I'll definitely go back to this.

So I decided to make bread pudding out of guilt. I had all these frozen hamburger buns and I couldn't bring myself to throw them out.... it seems so wasteful. I used this recipe and of course tweaked it a bit... I used a combination of brown and regular sugar. 15 rolls made up a 13x9 pan. Added a dash of cinnamon, nutmeg and some rehydrated raisins soaked in Kahlua yum!! I let it cook a bit too long but all in all came out pretty good and tasty considering it was my first attempt. Although, I WOULDN'T suggest trying it out on the first day of your Paleo Diet LOl
