    Made this for father's day and it was a real hit. All I did was add more blueberries. In our house, you can never have enough blueberries. This one is going in my recipe box.

    I only used 1 tsp of baking powder and half the amount of butter for a super yummy pancake. I tweaked the recipe a bit because I could taste the baking powder in the first batch and found them too greasy, but with these changes they were divine.

    Okay, I'm a Celiac and won't give up my favorites. I adjusted this recipe using Bob's Red Mill Gluten Free Baking mix for the flour and added in the proportional amount of Xanthan Gum (the Gluten alternative to make things sticky. If you can't have gluten, or know someone who can't, do yourself a favor and make these (they do take slightly longer to cook but it's worth it.

    At last -- homemade pancakes that are moist and tasty! I substituted milk and vinegar (one tbs to one cup milk for buttermilk and the results were outstanding. I will be making these from now on. Thank you!

    The recipe must have a typo. 2 1/4 tsp. b-pdr is WAY too much. Every other pancake recipe I've seen calls for 2:1 b-pdr:b-soda. That would mean it should be 1 tsp. b-pdr (not 2 1/4. I tried it with 1 tsp. and they were as fluffy as they could be. Also, I think it could use half the butter (or maybe NONE because they are very greasy. Other than that, they were pretty good; a nice almost crepe-like springy texture, and puffy & light.

    Tried these today....with 1/2 regular flour & 1/2 whole wheat.....very yummy. I wanted to make sure not to overmix them so that I had fluffy brownies, but it was my first time making pancakes, so I also was afraid that I wasnt going to mix them enough. I think i succeeded in finding the balance. Very light and moist. will definitely make these again and again.

    This is definitely the easiest and best basic pancake recipe I have ever had. They are incredibly moist and fluffy. My whole family gobbled them up!

    The only change I made was adding a teaspoon of vanilla extract. They were wonderful. This recipe is defintely a keeper!

    Remember not to overmix and you will be rewarded with perfect pancakes every time!
