    Super easy and delicious! I added finely grated carrots for my son to make him eat more veggies. He gobbled them up and didnt even say a word : Score for mama!! Thanks

    These pancakes are delicious. We changed it up and substituted 1/2 C AP flour and 1/2 C whole wheat flour instead of the 2 C of AP flour, substituted stevia for sugar, and added 1 TBSP of vanilla extract as recommended by others. The pancakes were light and fluffy and I think the addition of the whole wheat flour made them a bit more filling IMO. This is a great recipe for buttermilk pancakes that I intend to use for other variations.

    I love to cook but have always used pancake mix for convenience. Sadly, last time the mix turned out like hockey pucks. So threw recipe together on a busy AM-- so easy, fluffy & delicious! Son's friend staying with us ate 4 large ones! We now have a go-to pancake recipe! Yum!!

    These are great pancakes! I usually halve it and it turns out just as well. I heat the buttermilk in the microwave for 30-40 seconds to get it room temperature so the melted butter doesn't harden once it's added.

    I didn't have buttermilk so I used whole milk and I added lemon and orange zest. I think they would have been better with buttermilk.
