You were all very convincing and so right! My husband and I took this salad to a small dinner party last night, and it was such a hit. Just a few lonely pieces of lettuce left at the bottom of our large salad bowl. I want to make it again this weekend just for ourselves! My husband was skeptical of the anchovies, but is a believer now. Oh...we also used slightly less oil and took the advice about making sure the croutons were really cooked; not just browned. Thanks again!

Stop reading and make this salad! The dressing is killer! Extra anchovies for depth don't hurt....make it now!

After reading all the other 5-star reviews for this recipe, I figured I couldn't go wrong giving it a try...the result?... do yourself a favor and skip all the other caesar recipes on this site, make this one, and I can bet it'll become your new favorite caesar salad.

The dressing is the real star--it's tangy, creamy and could be eaten all by itself! The only suggestion? Make sure you give the bread for the croutons a nice, good toast. The recipe says "until they're golden brown," but they arrive at that color rather quickly, and it's easy to take them off the stove while they're still too chewy. This was my only mistake--since they aren't traditional, oven-baked croutons, you want a nice crispy outside and maybe a slightly-soft inside. I also highly suggest buying the best parmesan cheese you can find, and don't be shy with shaving it on top!!!

I'm VERY picky when it comes to the "perfect" ceasar....this recipe is definately perfection. I added a lot more lemon juice...and a few pinches of sugar to tame the mouth puckering sourness and to decrease the creaminess.

    So fresh tasting!

I've been seaching for a great Caesar salad recipe and this is it! The croutons are excellent and the dressing ingredients combine for the perfect flavor! I've made this several times and even those who do not care for anchovies love it!

I've never been a huge fan of anchovies, but in this dish, it added great flavor. Served with the croutons (I toasted mine in the oven at 400 degrees for 7-8 minutes and parmesan crisps, you have a wonderful course.

I was pleasantly surprised with this recipe. I didnt think a homemade recipe could beat out all the other name brands, but it did! It was creamy, yet light and not too overpowering. Very nice. I couldnt get my croutons real crispy or crunchy, but they still tasted wonderful and went perfect with the dressing.
