    I usually don't write reviews, but this was SOOO Good! I did make a few changes...instead of just chedder I used mexican enchillada cheese and jalepeno montery jack. I did take the advice posted earlier and added sour cream to the chicken and cheese mixture..along with some black beans..definitely not dry..overall this is one meal that I was extrememly satisfied with!

    Emeril scores again! This recipe is amzaingly delicious and pretty easy to make. It's not too hot, and has just the right kick. I can't wait to make it again! My husband loves it, too!

    Wasn't sure how the sauce would turn out because i'd never made it from scrath before, but it turned out great. I've made this alot and everyone really likes it.

    I had six people for dinner, doubled the recipe and thought I would get an extra dinner for the family out of it. Not only did I not get the extra dinner I didn't even get one left.

    Takes a little time, but is worth the effort.

    I have three sons and a husband. There are no left overs with this dish at my house. I get weekly requests to make this again and again. When I say that I'm THINKING about making this, their eyes light up, mouths drop open, and they say "Really?!!" My husband was raised in San Antonio and says these are the best enchiladas! The first batch went a little slow for me in putting this dish together. However, now I can whip up chicken enchiladas in no time. Emeril, you make me look like a queen in the kitchen! Thank you!

    these were kinda messy... great flavor, but not my favorite. i made this twice... once for my family and once for my boyfriend and his roommates... everyone seemed to LOVE it (except for me, i thought it was only so-so.

    I thought these were great and easy to do. I am not a fan of canned enchilada sauce and I loved this sauce and recie...Its also great recipe base to make your own variations. My husband likes REALLY spicy food so I added lots of jalapenos to mine..

    I also doubled the sauce to have a bit extra (after reading other reviews and froze some to make a quick dinner another night..

    I didn't have any chicken, so I just made cheese enchiladas, and they were pretty good, but I don't know if it was the type or the amount of chili powder, but they were incredibly spicy, so next time I might 1/4 or 1/2 the chili powder.

    I stumbled across this recipe when trying to find a good use for some cooked chicken I had sitting in the freezer. The sauce was easy, I had everything on hand already. I changed the filling, using the chicken, cheese and onion, but added some sour cream and some rotel. I also used flour tortillas because it was one less step since I wouldn't need to fry them in oil. They turned out really good!
