This recipe really is something special--simple and delicious. I was never a huge fan of squash or eggplant, but this dish has sold me on both. I do salt my eggplant after cutting and drain to get rid of any bitterness before cooking. (Rinsing definitely required.. I also use one of each red, yellow, and green bell peppers instead of just a cup of red and green. Adding a can of great white northern beans or cannellini beans makes this a hearty, filling main dish. Absolutely love it!

This is by far the most amazing Ratattouille recipe I've ever made! I did put a bit of my very simple marinara (1/2 cup and a splash of white balsamic at the end. Ate on Penne the first night with grated parm, but ate room temp by itself the next day. My family can't decide which they liked more: Emeril, you never fail us!

Updated August 2012 - a year later and I have made over 50 batches of this that never disappoint. Just can't get enough of this wonderful Ratatouille! Many variations I have made and it always comes out great.
My August 2011 review:
This is fantastic! I've made about 4 batches of this so far and my wife loves it. I substituted 28 OZ can of diced low sodium tomatoes, added 1/4 cup diced Kalamala olives, & 1.5 tablespoons of balsamic vinegar in the final step. One time I forgot to add the diced olives and we noticed the difference so stirred them in at the end. This recipe is so easy even for someone as inexperienced as me.

This was wonderful!! My daughter who is 4 likes to play Big Chef/Little Chef, we had so much fun because of the time we were able to spend together making it. Also, she was enthralled with making something that she has a movie of.. Thank you Emeril for giving me a dish she loves to eat and also loves to help make.

This is SOOO delicious! My kids all love vegetables anyway but this will win over even a vegetable hater. The only things I add are 1-2 sliced carrots and 1-2 Tablespoons of kethup, (yes, I know but it adds that certain "zing". We also grate pecorino or parmesan over the top. Tastes great cold the next day, too.

Very good dish! I'm fairly new to this whole cooking thing, but this dish was definitely easy to make! It smelled great and tasted even better.
