I made this dish as a change-up to the same boring veggie side dishes we are used to making for dinner. It was easy to make, and very good. I left out the eggplant, but otherwise didn't change anything. Good flavor and added something special to dinner. Would make again.

I make this 2-3 times a month!!! I make double batchs sometimes because everyone gobbles it up! I do add more onion and garlic. This is definitely one of those recipes that demand you cut everything up beforehand rather than as you go because it is so little cooking time.
I have now planted every one of the veggies & herbs in my garden so I don't spend as much at the grocery.
This can be a one-dish meal or a great side dish.

This is a good dish. It is simple to make. I found using spaghetti sauce in place of the diced tomatoes went a long way to give it more "italian" flavor.

This was my first time making ratatouille but it was very quick and easy. I added a box of penne to make it a pasta dish. The penne and ratatouille complemented each other perfectly. I will definitely be making this for dinner again in the future.

Honestly, we made this dish and had a movie night with the kids watching Ratatouille. Ended up being a great dish the kids even liked- definately will be repeated. Thanks Emeril!
