This is my husband's favorite snack. I made some changes to the recipe. I do not use tahini. I add a few olives stuffed with Jalapeños and a little more olive oil and a little extra heat.

Really simple and delicious. Just the right amount of spices. Skipped the extra oil and parsley but it would be just as good with it. This makes 4 cups of hummus so I sent some for afternoon snack with my husband. His office mates loved it.

Everything was very tasty. Now that I've made the seasoning I won"t be without it. The Pita chips were wonderful. Thanks again Emeril for another great and tasty recipe!

Great recipe. I never make enough chips - guests love 'em. I too cut back on Tahini and did add a bit of chipotle sauce just for a 'hint' of heat. For the garlic - making the paste works but I now just turn on the food processor and while it is running I drop two cloves in (one at a time. The processor whacks them around in to a fine mince. Then I add all the other ingredients and process away. Works just fine.

It's so typical of Emeril to make a quick and easy recipe slow and difficult. I have no idea why he has you mash the garlic with the salt. and chop the peppers when you pulverize it all in the food processor anyway. I did it just like he said, but next time a will just throw in all of the ingredients and process and I'll bet no one will be able to tell the difference.
