I made lima beans for the first time ever using this recipe. They were EXCELLENT! I couldn't believe how flavorful they were. The only thing I didn't include was the red and green bell peppers and the celery ONLY because I didn't have it on hand. I would recommend cooking these to anyone who loves lima beans! EXCELLENT! Thanks Emeril.

When I first saw Emeril cook this on TV, I knew I had to cook them. They were and are still so delicious! It's just the two of us and we had so much left over that my husband took the leftovers and cornbread to work and they wanted more. The only thing I changed the second time was to be more careful of the salt - the smoked turkey is salty enough. I've been fixing these since I first saw them on TV which is about 2 or 3 years. They are a staple every fall/winter.

Could not get any better. Easy. Doubled recipe for the cold days ahead. My dog even wanted leftovers and she id picky.

This was the best. I kept the lid on to preserve the broth. I served this over rice with cornbread for a complete meal.
The stock took 3 hours as I had 1.75 pounds of smoked turkey but it still fell off the bone.
Soaking the beans for 5 hours was enough, along with a hard simmer and it was done in 45 minutes

I made this a Soup rather then a Stew, I used the same amount of liquid and used the whole Green and Red bell peppers, i used Navy Beans instead of Butter Beans, but i only used 1/2 a pound of the beans and 1 Smoked Turkey Drum Stick. This will be my "Go To Soup" for the winter along with "Semi Sweet Corn Bread". This Is A Keeper.

I was lucky enough to have some fresh butter beans, didn't know quite what to do with them. Emeril to the rescue! These are the best beans you'll ever put into your mouth!!! Seasoning is perfect!!

These butter beans were the best I have ever made and a great comfort food. The flavors were amazing and so different from the bland ones I have had before. My entire fanily raved about them. This is a keeper for comfort food and country cooking.
