Wonderful combination! It's amazing what a great salad you can make with essentially 2 ingredients (the dressing really makes it complete though. I made this with the chicken from the same episode. I'm a long-time Food Network junkie, but this was the first time I've ever run out to the grocery store after watching a show so I could make the entire meal that same night. I'm already hooked on Amy's show.

This a great vinegerette . I made the salad with canned beets instead of fresh and it was quick and delicious. This recipe is a keeper. I'll serve it again soon.

This salad rocks. It's so fresh and flavorful. I roasted the beets yesterday and had them in the fridge. This kept them nice and firm and made the sald a snap to put together.
