    This soup was really good and super simple. The best part is that is lighter than most of the versions of this soup that I have seen. Will definitely make again!

    It's cold here today (in APRIL! so I decided to make a potato soup. We always have leeks in the house so when I saw Amy's recipe I decided to give it a whirl.

    Wow! I used an immersion blender and blended until entirely smooth. I did add about 1 Tblsp salt at the end and some freshly ground pepper. I only had fat free half-and-half on hand so I used 3/4 of a cup instead of 1/2 C heavy cream. I couldn't tell the difference.

    Served the soup with some turkey paninis and had a great comfort food lunch. Thanks for the great recipe! It's a keeper!

    I made this one night and it turned out to be excellent whipped mashed potatos. I had used red potatos since that's what I had at the time and I think I used too many. It was tough to convince my family that it was really a soup. ;-

    I really liked this recipe it was simple to make and great for cold weather I did change it a little I added nutmeg on the top of each bowl and did not have any parsley I will make again

    This recipe was so easy to put together and so delicious. I served at a dinner party with guests who "know good food" and they loved it. I will make it again and again.

    This was really, really easy. My husband and I were so impressed by the results...it was really yummy. I modified the recipe by adding fresh thyme instead of chives and 1/4 cup of cream instead of 1/2 cup -- both worked out well!
