Ingredients

  • 1 cup chorizo, sliced into 1/2-inch thick pieces
  • 1/2 cup red onion, diced
  • 2 tablespoons jalapeno, finely diced
  • 1/2 cup red bell pepper
  • 8 eggs
  • 1/2 cup milk
  • 1/2 teaspoon sea salt
  • 1 teaspoon pepper
  • 2 (9-inch) flour tortillas
  • 1/4 cup shredded jack cheese
  • 1/4 cup shredded Cheddar
  • 1/2 cup scallions, diced

Directions

Pre heat oven to 375 degrees F.

In a skillet over high heat, cook chorizo. When the sausages are almost cooked through, add the onion, jalapeno, and pepper and saute until vegetables are soft. Remove chorizo mixture to a bowl and let it cool.

In medium bowl, mix eggs, milk, and salt and pepper. Add the chorizo mixture to the egg mixture.

Spray nonstick cooking spray on a pie pan, place 1 tortilla and pour the egg/chorizo mixture into the pan. Bake for 15 minutes. Remove from oven, top with another tortilla and the shredded cheeses and bake for another 5 minutes.

Remove from oven and garnish with scallions. Serve immediately.

    I used breakfast sausage and a giardenairre mix instead of jalapenos. reg onion instead of red. pepper jack and cheddar on... top. a little bit of diced chili ready tomatoes and then served with a dollop of sour cream. It was good. I could have cooked the eggs a bit longer..but don't know if it was my stove or the recipe. I will make again.Read more

    This was a really good recipe, I really liked it and it make up really well - very easy. It can also be made just as easily... without the chorizo so that it can be made vegetarian (if you want the heat still then you can add some red pepper flakes). delicious.Read more
