Ive never reviewed a recipe before but this was so good I had to sign up so I could review it and give it 5 stars. Very delicious! I actually used the recipe to make coconut chicken instead of shrimp and it was amazing. Can only imagine how good it will be when I do the shrimp! The batter is great as well as the sauce. Will definitely make this again.

I use the batter portion of this recipe only, using canned coconut milk, and I don't make them into lollipops. Super tasty batter. It's a little messy, and make sure you don't leave too much batter on your shrimp.

    Excellent!!!, Excellent!!!, Excellent!!!
I tried last night and these are great. My son loves these. I will be making for my New Years eve party. This time I will try the sauce with it. I thought it would have a beer taste since I did not have coconut milk, but even with beer it was excellent. All we tasted was coconut and shrimp. mmm mmmm good.

This is restaurant quality Coconut Shrimp. Fantastic! I added some coconut water to the dipping sauce to meld the flavors. I also battered pineapple to compliment the shrimp. I also prepared a Mexican salad with lettuce, cabbage, mango, pineapple, cheese, tortilla chips, avocado, salsa, sour cream/avocado dressing, etc. And I put the Coconut Shrimp Lollypops on top and drizzled the Dipping Sauce on top of the Shrimp! The perfect Summer in Florida meal!

I only used the sauce recipe. It was perfect for my girls only dinner party. I live at the beach;so, we love fruit based foods with a kick. This worked perfectly and was not as challenging as I had anticipated. It was a hit.

Great easy recipie. Batter can be made a couple of hours ahead and you can then dip and fry right before company gets there.

I did not try the shrimp, but made the apricot-ginger dipping sauce for a last-minute appetizer that I took to a party. This sauce was fantastic -- I will definitely add it to my recipe box!
