I found the easiest way to keep the breading on is to the follow recipe and then deep fry the steaks. I've never had the breading fall off and taste wonderful!

I thought the breading on the steak was good. Perfect seasonings, but it fell off the steak at the end and my steak was very tough even after pounding it thin. Next time I would just use the cubed steaks from the store. I tried that before and it tasted much tender. Otherwise, I would go with the rest of this recipe. My gravy turned out brown, not white. Overall, this was a good recipe, but too much trouble for something so simple.

Instead of running the chicken through the flour a second time I put them in Panko bread crumbs, and man, what a crunch! If you are looking for a big crunch try the Panko.

MY GRANDMOTHER TAUGHT ME THAT LETTING THE 1ST COAT OF FLOUR MIX DRY JUST A BIT BEFORE I DIP IN MILK MIXTURE IT DOES SEEM TO HELP KEEP THE BREADING ON.

We absolutely love this recipe, but we've tried it twice now and the breading always falls off the steak. We've tried an egg bath, but to no avail. Any suggestions??

Absolutely delicious recipe... the texture of the chicken was fantastic and the gravy was flavorful. The seasoning really stood out. I made Paula's version and hers was good... but Bobby's was hands down better. Paula is still the queen of southern cooking, but I just happen to love Bobby's country-fried steak a little better. Highly recommended!
