    Tasty beyond belief...it has the right texture, wonderful taste ... when making...best if you heat the remaining 1/2 & 1/2 so that it helps melt the cheeses before going to the oven....but all in all Oprah is right...Delilah is the Queen of mac & cheese!

    This is the best recipe!!!! I watched Ms. Delilah on Oprah and proceed to make the her reipe and all I can say is WOW!!! I made mac n cheese all the time for family functions etc but when I used her recipe the pan ended up EMPTY!! I use all the cheeses and even throw in a few more..it couldnt hurt and every time it disappears there might be a piece of an elbow in the pan but they'll eat that too. I usually double up on the recipe and put it in a large casserole dish, one that feeds up to 30 people...Yes I am serious when it comes to Mac n Cheese!! So now I have been dubbed the Mac Mama..so every event I am making a pan!!

    My family just ate the batch of Delilah's 7 Cheese and it was a hit! After reading all of the comments I have come to realize that there are two types of mac and cheese people. Those who like it cheesey and those who like it firm. If you're the cheesey type, use less egss and more Velvetta. Eggs are used because when it cooks it binds the mac and cheese together. The more egss you use the tighter your dish will be. The Velvetta is used because it acts as a sauce to help give the dish a smooth feel. I used nine eggs, extra Velvetta and extra Asiago. The texture was truly cheesier and the extra Asaigo is a flavor booster. I do agree that the cheese cost but all of the praises I received was well worth it. Next time I will add White Truffle oil to give it a gourmet taste. Oh, I also seasoned my mac and cheese with salt, pepper and a little garlic powder to balance the taste of the cheese combinations. I hope this helps!

    When I watched Delilah's Throw Down with Bobby Flay, I wrote down the 7 cheeses and basic ingredients, but not the specific amounts of each EXCEPT the Velveeta and she said 1 pound, not 1 cup!!! I don't think 1 cup weighs 1 pound, but I could be wrong! It would be better to state that this recipe would fit a deep lasagna pan or a 10x15 pan or casserole dish. Putting it in a deep pan would keep it from drying out in the oven. I would also cut down the total time in the oven as 1 hour seems excessive to me! Now that I have the exact recipe, I'm dying to try it! Two things I would add for flavor are garlic powder and onion powder to balance all the cheese and they are always flavor enhancers -2 tsp. Garlic powder and 2 Tbsp. onion powder.

    This mac and cheese was a hit at thanksgiving. I have always been disappointed with my mac and cheese. Not this time. I couldn't find all the cheeses, so I did improvise, but it still came out very good. I will definately be making this again, and this has given me the inspiration to play around with other ingredients to make it my own. Thank you Delilah and food network for sharing this with us. Oh and can't forget Oprah for discovering this wonderful dish.

    Absolutely delicious!!!!!!! If cooking for 4-6 people, cut this recipe in half twice! The 7 cheeses are absolutely orgasmic!

    this recipe is amazing but if you want a really creamy mac and cheese, don't bother baking this dish its WAY better when you skip the oven!
