the cupcakes turned out great.. used milk with vinegar as buttermilk substitute... after reading the feedback here, i only used 1/3 of the frosting recipe and still had left-over.... everyone loved it!

The recipe for the frosting is enough for maybe 150 cupcakes! Maybe this was the amount to coat that many cupcakes for the people in the throw down audience? I ended up with 24 cupcakes and halved the frosting recipe and still have enough frosting leftover to coat another 24 cupcakes or a whole cake!

I just made these last night. The frosting is absolutely delicious! I made everything in my Kitchen Aid stand Mixer. I wish I had read the reviews on adding the sugar VERY SLOWLY to the batter. I did follow the recipe instructions...but think I could've added the sugar more slowly than I did because the cupcake liners and pan were OILY when I removed them (and I used the JUMBO sized cupcake pan. I wish I had read one reviewer's comments where they said they added the sugar 1/4 cup at a time for the batter. I will do that the next time I make them. But, the frosting came out fabulous!!
