    I'm super frustrated with this. My husband and I are celebrating our wedding anniversary and thought this meal looked great. I read the reviews and got to work. The chicken was in the oven for hour and 15 minutes and is still raw on the inside. It's back in the oven now but we're heating up leftovers for our anniversary dinner because the chicken will not be ready for quite some time. I chopped up the sweet potatoes like someone suggested below and that helped but there are still a good amount of them that are not done. My only guess is that perhaps the roasting pan is not big enough. Any advice?

    This was REALLY good and fairly easy, although it took me longer to prep everything. I'll admit that I have found only a couple of recipes on Food Network that are good, or maybe I just have trouble making the recipes so they taste great, but this was definitely my favorite so far! I never watched Food Network Star, but this makes me really want to find all Tom's recipes and try them.

    This is Wonderful! Great flavor. The chicken was juicy & the mushrooms complimented the chicken perfectly. The sweet potatoes & red onion were delicious! I cut my potatoes to 2" pieces, and they came out perfect. I also didn't put the chicken on a rack, & I think all the juices from the chicken helped make the potatoes & onion more flavorful. I had some extra mushroom pieces & put them in the cavity of the chicken. This is so good, I will definately make it again! I may even try this recipe using a turkey.

    Perfection! This was amazing and easy! The only thing I would change would be to cut the sweet potatoes in to smaller pieces before roasting. The chicken was done much earlier than the potatoes.

    Give me a down to earth host with energy that carries over to great recipes and outstanding presentation. I am looking forward to making many more recipes from this chef! This recipe was excellent. I had friends over for dinner and made this just as directed by Tom. Superb! Thanks Tom!

    This was an absolutely divine combination! I only marinated 4 portabellos rather then 8, and I was kicking myself after tasting them. I should've just marinated 8 and tossed the ones that didn't fit under the chicken skin in the roasting pan! I cut the onions into smaller wedges, too, to ensure they would be caramelized and soft. With the juices of the chicken dripping down onto the sweet potatoes and onions giving them a lovely hint of smokiness from the paprika and ... oh, such a lovely dish!

    I came to find this recipe, and so glad I found it. Hope Tom gets a show somehow. Tom is different from all of the chefs on the network.

    I can't wait to try this, it looks awesome. Congratulations on making it to the final three. You were great, but after watching Aarti's new show today, I have to say that the judges made a fabulous choice. She's terrific!!!!!

    This was FANTASTIC!!! The marinade was delicious and the mushrooms under the skin kept the meat moist and juicy. This recipe is a keeper, but I've renamed it "Tom's Big Chef Chicken" in my recipe file. ;
