This is a good way to use the surplus of tomatoes from the garden. I doubled the amount of tomatoes and used 1/2 mayo and 1/2 plain yogurt. It was tasty.

Delicious, and used up lots of fresh tomatoes. I was only able to layer twice with my pie plate--if you have a deep-dish one I'd use that instead. Also when they say to let it cool, LET IT COOL! Otherwise it's just a big soupy mess. Still yummy, though.

Made this tonight as a side for my DH and myself and as a vegetarian entree for my parents (be careful about ready made pie crusts, a lot of them contain lard - not good for vegetarians - I found one made for vegans Anyway, it was lovely - enjoyed by all, with no leftovers, including our 6-year-old...
