Ingredients

  • 1 1/2 pounds juicy tomatoes, cut into wedges
  • 1 tablespoon crushed garlic
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 red onion, cut julienne
  • 1/2 cup chopped fresh basil leaves
  • Salt and pepper

Directions

Mix all ingredients in a salad bowl. Toss gently and season with salt and pepper. Serve at room temperature family style.

    I found it needing a splash of basalmic. Then, after sitting about 15 minutes of marinating the flavor really came together. Very healthy. I used a fraction of the onions they recommended.

    This is good, but there is really too many onions. Taste the onion first to make sure it's not too strong and adjust or soak in ice water to take some of the strongness (lol is that a word? out of it.
