Cook the tater tots according to the package's directions. Transfer to a large platter. Meanwhile, stir the cilantro and scallions into the sour cream in a serving bowl. Heat the Timeless 12-inch cast iron pan over high heat until hot. Add the beef and spread in an even layer. Cook, stirring and breaking the meat into bits, until browned, about 7 minutes. Lower the heat to medium-high. Add the onion and cook, stirring occasionally, until crisp-tender, about 5 minutes. Add 1 cup salsa and cook, stirring, until the liquid evaporates, about 5 minutes. Remove from the heat and sprinkle the cheese on top. Line up the tater tot platter, cast iron pan with the beef mixture, sour cream mixture, remaining salsa, and guacamole on the dinner table, buffet style.
