- 1/2 cup butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup packed light brown sugar
- 1/3 cup toasted flax seed
- 1 cup pecans, toasted and chopped

- 6 cups rolled oats
- 2 cups dried cranberries
- 1 teaspoon ground cinnamon
- 1 teaspoon freshly grated nutmeg
- 2 oranges, zested

In a large skillet, melt the butter over low heat. Add the honey, vanilla, and brown sugar and stir the mixture until it is melted. Turn off the heat and add the flax seed, pecans, grits, wheat germ, coconut, oats, cranberries, cinnamon, nutmeg, and orange zest. Stir the mixture until the dry ingredients are completely covered. Remove from the heat and cool to room temperature.
Preheat oven to 350 degrees F.
When the mixture is cool, add the egg whites and stir to combine. Spread the mixture onto a baking sheet and bake until golden brown, about 15 minutes.
