Ingredients
- 1 can red beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can white beans, drained and rinsed
- 2 bunches scallions, sliced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeno, minced and seeded
- 2 large tomatoes, seeded and diced
- 2 limes
- 5 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon cayenne pepper
- 1 teaspoon chili powder
- Tabasco
- Salt
- Cilantro
Directions
In a large bowl add beans, scallions, red and green peppers, jalapenos, and tomatoes. Toss to combine. In small bowl whisk together juice of limes, garlic, olive oil, cayenne, chili powder, a dash of Tabasco and salt. Pour over bean mixture and toss to combine. Top with cilantro and serve

I make this for every potluck I go to. I have been asked for the recipe over and over again. When one walks into eat the first thing they smell is my salad. Love cilantro and lime. The only thing I change is the amount of scallions. I use less by half.

Everything worked well together, but had I left the dry seasonings out or replaced it with something else it would have been good. It made the texture gritty and overpowered other flavors.
