Ingredients
  • 1/2 cup mayonnaise
  • One 8-ounce package cream cheese, softened
  • 1 cup grated sharp Cheddar cheese
  • 1/2 cup grated Monterey Jack cheese
  • 2 green onions, finely chopped
  • 1 dash cayenne pepper
  • 8 butter crackers, crushed, such as Ritz
  • 8 slices bacon, cooked and crumbled
  • Corn chips, crackers or bagel chips, for serving

Preheat the oven to 350 degrees F.

In a medium bowl, mix the mayonnaise, cream cheese, Cheddar cheese, Monterey Jack cheese, green onions and cayenne pepper. Transfer the mixture to a shallow baking dish, such as a 9-inch pie pan. Top the mixture with the cracker crumbs and bake until heated through, about 15 minutes.

Remove the pan from the oven and top with the bacon. Serve immediately with corn chips, crackers or bagel chips.

My friends and I loved this dip! I've never been a fan of mayo, so I subbed in Greek yogurt, and then added a little extra sharp cheddar to the top before baking. I made this exactly as written using quality, name-brand ingredients; and served with Stacy's "simply naked" pita chips. Between the grease and the salt, I found this inedible. It was a simple and delicious recipe. I have made it twice - I added a little bit more cayenne the second time since I really enjoy spicy foods. Absolute deliciousness!! Only 2 slight changes. We used potato chips instead of crackers because we're gluten free and real bacon bits [Costco] instead of frying up 8 slices. I topped it with the bacon after the 15 minutes in the oven then stuck it back in for just a minute or two more to sorta heat the bacon. Fabulous! Very yummy! I made a few changes though, used all medium cheddar cheese, used about 5 chopped green onions, 2 tbsp dry ranch dip, doubled the amount of bacon (I used the precooked kind, just microwaved it til crisp and chopped), I used half in the recipe and the other half sprinkled on top before baking. This was the dip of the gods!!!!!!!!! My husband hates most every dip out there but alas he fell in love with this! We had it three times over Thanksgiving. I have made this several times for entertaining and it is always a hit. Loved it! This was delicious. I'm not a fan of salt, so with the bacon topping and eating it with "Scoops", that sent the salt content into overload. That was a bad decision on my part. I made this for a co-workers going away lunch about 3 months ago, all I can say is GOOD LAWDY this is amazing! I brought it to work and by the time we ate it, it was only warm and it was STILL awesome! Thre was not a scrap of it left! I was kind of skeptical because of the mayo (had a bad expierience with cooked mayo, my worries were put to ease the SECOND I put this in my mouth! SOOOOOOO YUMMY! One thing I will say though is that whenever I am making dips, or cheesecake or anything tht requires cream cheese, I ONLY use Philadelphia! To me, there are times for store brands, and when you are making something where the cheese is a main ingredient IS NOT ONE OF THEM. Philly cream cheese, Hellman's mayo, and Sargento or Kraft cheeses and Ritx crackers. This was delicious! I did add hot sauce (in lieu of cayenne pepper, a dash of Worcestershire sauce, and a little garlic powder because it didn't seem to have much flavor when I mixed it up. This recipe is sooooo good, but a little trick to add some "healthy" texture is to toast and fine chop some walnuts and add to the cheese mixture when assembling. This is, by far, the BEST dip I have ever made. I have been making it since I bought Trisha's Home Cooking cookbook. It is a favorite of my family and friends. It is so easy to make.
