Ingredients
  • 3 cups cooked, shredded chicken
  • 2 cups chicken broth
  • One 10-ounce can cream of chicken soup
  • 1 cup self-rising flour
  • 1/2 teaspoon pepper
  • 1/2 cup (1 stick) butter, melted
  • 1 cup buttermilk, well shaken
Directions

Preheat the oven to 425 degrees F.

Put the chicken in a 2-quart casserole dish. Combine the broth and soup in a medium saucepan and bring the mixture to a boil. Pour the broth mixture over the chicken.

In a separate medium bowl, mix the flour with the pepper. Stir in the melted butter and the buttermilk. Pour this mixture over the casserole and smooth the top; do not stir. Bake the casserole until the crust is brown and the filling beneath is hot and bubbly, 45 minutes.

Absolutely perfect! I didn't have buttermilk, so I just used the milk I had and it was very tasty! This recipe is VERY easy and fast to make . I did do a few adjustment .Like others I added about 1 1/2 cups of peas and carrots .I had a rotisserie chicken so I use the entire 2lb chicken leaving off the skin .I used (2) 10oz cans of cream of chicken and ½ of cream of mushroom for some more favor and 1 ½ cups of chicken broth ( I wanted it to be a little thicker ) .I added chicken seasoning to the mixture and It turned out Great. Oh and I added some white cheddar cheese only on one half as other reviewer suggested and it tastes soooo good . This was great! I made a few changes. I added a bag of frozen mixed vegetables to the chicken mixture, because that makes it more of a meal-in my opinion. Also, instead of the "cream of" soup, I used 8 oz of heavy cream, topped it off with some milk (to make 10 oz-the amount of cream soup in a can) and added flour. It still turned out great and I plan on making this again. I am always looking for ways to use up rotisserie chickens and this fit the bill. The crust was delicious (obviously - butter and buttermilk). Like other posters I added a couple handfuls of frozen veggies with the chicken. Because of the reviews saying the liquid was too runny I only added about three quarters of a can of chicken broth and let it sit for about five minutes before serving and it was great. This was absolutely delicious. We used about 2 lbs of chicken breast and put it in a 9x13 dish. We didn't bother to try smoothing the biscuit mix. Dollops will spread and connect as it bakes. I just made this for dinner and it was excellent! I did read the reviews and must of them said it came out really soupy so I thickened the cream of chicken and broth mixture to my liking with flour. I probably shouldn't be rating this recipe since I altered it immensely but here it is anyway. I took another review's suggestion and reduced the chicken broth to 1 and 1/2 cup since I like a more thicken pot pie. I also added fresh mushroom and a bag of frozen mixed veggies in the mix while it was boiling. I then sauteed a half of onion and added it the mixture before placing on the flour topping. My flour mix was watery probably because I only had powered buttermilk at hand. Therefore, I added more flour to the mix slowly and eyeballing it till it was the texture of a smooth cake batter. Nice taste but way too soupy! I made the recipe as written but I did add fresh carrots, celery and peas. I had to serve this dish in bowls or the sauce would have run everywhere. The crust also turned brown after 32 minutes.I would recommend thickening the sauce with cornstarch and broth or water.Heat it to boiling then stir until it gets to a desired consistency. Great Comfort Food Recipe. I added frozen mixed vegetables, frozen diced potato's and 2 cups of shredded Monterey Jack Cheese. I just went by looks as to how much veggies and potatoes to add (I didn't want the gravy to be too thin). I also combined all ingredients in the pot of soup and broth and then poured into the baking dish, so that all ingredients were well combined. Excellent recipe- the topping/crust was just perfect. Next time I will add a little less chicken broth, maybe 1/4 cup less, because the 'gravy' was a tad too thin. I added frozen peas and that worked out well. Shredded cheddar cheese would be great also- next time I plan to add the cheese just before the topping. With regard to the topping/crust, I ended up just dolloping it over the top- I could not imagine being able to spread it because it sank down a bit, but it rose back up while baking and it turned out just fine. This recipe is wonderful. I have made it twice already since last week. My husband didn't like that it didn't have any vegetables in it, so the second time I made it I put in a can of peas. I do agree that it needs some veggies in there, but it is really delicious even without (my kids preferred it without). What really brings this home is the buttermilk topping. OMG! This is the best recipe ever. I did make a few alterations/additions. Since I do not like cream of chicken soup, I used Cream of Mushroom. I also sautéed 1 medium onion with some sliced fresh mushrooms. In addition, I steamed fresh green beans and cauliflower and par boiled some cubed potatoes. I placed the chicken in the bottom of an oblong glass baking dish. Then placed the cooked cubed potatoes on top of the chicken; then the beans and cauliflower; then the onions and mushrooms. I placed the cream of mushroom combined with the chicken broth (I did add 1 tbs flour as it was a little thinner than I liked over the top. The only change I made to the topping was I added 1 tsp of thyme to it. My son said the outdoors smelled heavenly while it was cooking. Really good comfort food, tasty and hearty. I used chicken stock instead of broth and 3 tins of Costco chicken shredded up. The biscuit top was to die for! This was delicious and so easy! For the chicken, I used a store bought cooked roaster. For the broth, I used low sodium and it still had plenty of salt. To round out the meal, I boiled some baby potatoes and cooked a bag of frozen peas. Next time I will try adding some thyme in the crust topping, as one reviewer suggested. I made this last night and the entire thing was devoured by my husband and son! I prepared this for our family and another. Basically tripled the ingredients except used only a32 oz. pkg. of chicken broth. First I sauteed some onion, garlic and mushrooms in butter, added a family sized package of frozen mixed veggies which I had thawed and then the broth & soup and a few tablespoons of sour cream. Yummmmm, I added a little seasoning salt to the chicken after I shredded it and tossed it through, and a couple of teaspoons of dried onion to the chicken soup/ broth mixture. This is a good recipe and one to keep in your back pocket for emergencies. I made it using 2 cups of chicken and 1 cup peas, carrots and potatoes. I also added a little poultry seasoning. I made it for my husband and mother and they loved it. One thing that I might change is to use a more shallow casserole dish. I used a rather deep one and the crust came out more like a dumpling. Still good...but, next time I will use a dish that will allow a thinner crust. For the buttermilk...not easy to find where I normally shop. However, I found powdered buttermilk and it worked great! I was excited to make this dish, as it looked like good ol' comfort food. I'm a well-seasoned cook but I had one problem after another. I used a 2-quart casserole and luckily I had set a baking pan underneath it in case of boil-over, which it did. The chicken, soup and broth went together fine but when I mixed the crust ingredients, it was more like a drop biscuit dough rather than something I could pour or even spread. I had to "dollop" it on top and then try to spread it over. I put it in a 425 degree oven as specified but after only 25 minutes it was bubbling like crazy and the crust was starting to get too brown so I removed it from the oven. I allowed it to cool about 15 minutes before scooping some out. While the chicken and gravy tasted good, the crust was a disaster. The top was way too brown and what was underneath was like a flavorless paste. I can't believe I'm the only one whose dish didn't turn out great. Yes using "canned soup" is assembling vs. scratch cooking. However it has its uses and this recipe is one of them. Plus sooo many of us need some help to get dinner on the table fast... If you don't want to use the soup then make a roux. Melt butter, add flour, stir to cook about 5 min. then slowly add heated chicken broth to the consistency of a thick gravy and proceed. item not reviewed by moderator and published
