    This was okay. I did place the butter and sugar mixture in the microwave and it blended better. I saw Trisha Yearwood make it on her show and they looked delicious but they were not as sweet as I expected. I don't plan on making this again.

    We love strawberry desserts in my family and we loved this recipe! I noticed people having problems with the icing and it did take a few minutes to come together like the recipe said it would, but I have to say I went exactly by the recipe and it turned out great!

    Just baked this cake today to take to a family lunch. Very tasty and moist! I was having some of the same proplems with the butter not mixing with the strawberry syrup so I placed the bowl into the microwave for just long enough to warm the syrup and melt the butter. Then it blended perfectly as I added the sugar. I'm thinking of maybe adding nuts and chopped up pineapple next time.

    Also, if it is the first time you are trying this, the 'frosting' isn't acutally frosting. It is a strawberry glaze. So be sure to poke holes in the cake or cupcakes so it can soak into the cake.

    I just ran to my computer to see what I did wrong with the frosting! It does not blend well at all!

    Edit: I don't think my butter was room temperature enough. Next time I will leave the butter out overnight instead of a few hours. I had to nearly burn the motor out of my blender to make it smooth, but it eventually smoothed out from the heat of the motor!

    I thought the cupcakes were just ok. The frosting /glaze was a total disaster. It would not blend together and honestly I caouldn't even try it because it looked so gross. I ended up throwing everything away.

    I agree with Carol...while my butter blended well, the frosting never hardened so it was gooey on top. I'm gonna play with it and see if i can figure it out.

    This is great - tasty! I had one problem & that's why I only gave it 3 stars. The glaze would not come together for me no matter how long I blended it. The butter didn't blend in - it stayed separated. Don't know what I did but the flavor was good just didn't look very pretty.

    I love that it's made with gelatin. I'm going to try adding banana extract to make "strawbana" cupcakes.
