Ingredients
  • 8 chicken tenders or breast cutlets, flattened and cut in half
  • Two 3-ounce packages cream cheese, softened
  • 1 jalapeno pepper, seeded and finely chopped
  • 16 slices bacon

Preheat the oven to 400 degrees F.

Top each piece of chicken with 1 teaspoon cream cheese and 1/4 teaspoon chopped jalapeno. Roll up each filling-covered chicken piece and wrap with 1 slice of bacon, securing with a toothpick. Transfer to a baking sheet and place in the oven for 20 minutes, flipping halfway through.

Cook Notes: You can also cook these on an outdoor grill: Grill for 8 to 10 minutes, turning once.

Unfortunately did not taste as good as they look. Definitely would rather make jalapeno poppers. The chicken didn't really add anything to the dish. Simply split jalapenos fill with cheese and rap with bacon and bake. Much more flavor and easier. item not reviewed by moderator and published
I'm going to try this, but will pre-cook the bacon in a 400-degree oven for about five minutes. I had the same problem with her asparagus bundles -- bacon needed more cooking than the asparagus did -- a friend tipped me off to pre-cooking the bacon on a cookie sheet. EXcellent ! I cut the bacon slices in half. They stretch to fit. Did not change any of the ingredients and they were great! This recipe has good flavor. I seasoned the cutlets with salt and pepper, then used a non dairy chive and herb cream cheese, no jalepeno, and bacon. This recipe lost a star for how long it took. I baked 400 degrees for 45 minutes and the bacon still wasn't done so I threw them in a frying pan and fried them till bacon was crispy(only took about 5 minutes in the pan). The other lost star was for how dry the chicken got waiting for the bacon to crisp up. I didn't have a problem with oozing cream cheese due to my looking at the reviews and cutting back. If I try this recipe again I may start in the frying pan and go to finish off in the oven. item not reviewed by moderator and published
I like the idea of this recipe, so was excited to try it - I substituted cilantro for the jalapeno - but the cream cheese did run and the bacon took much longer to cook. Will try it a couple more times to see if I can get it right. item not reviewed by moderator and published
Very tasty - but use less cream cheese. If you use the amount in the recipe, it melts out all over the pan. Also, unless you really like HOT, just 3 to 4 pieces of jalapeno for each roll will do. These are great for party's. item not reviewed by moderator and published

This looked great on TV but when I made it the cream cheese melted into the bacon fat....I had to cook for 35 min as bacon too rare for our taste. So this recipe is a no for me!!! item not reviewed by moderator and published
