    the potatoes tasted good, but they are not twice baked. Too much cream,I used fat free half and half about 1 1/2 cups

    I used 4 potatoes and glad I did. 2 cups cream is still too much for 4 potatoes, add in slowly until you get the right consistency. Let the cream steep for as long as you are cooking the potatoes. I used 4 individual ramekins and there was still enough for 2 to 3 more. Except for the proportions this was very good. My family ate it right up and wanted more but luckily I only made 1 each....leftovers tomorrow night.
