My mom was coming into town today and I threw this recipe together on the spur of the moment. I made this as a salad with lots of spinach and plenty of avocado for each plate and substituted some garlic aioli I had made a couple days ago instead of the mayo which I think gave it a perfect consistency for dressing. The only hitch I had is when I went into shock when in 2 minutes the oven was pouring smoke and I thought I had just destroyed the dish with alarms blaring. Fortunately mom was there to tell me that bacon does that when being broiled. Does anyone have any tips for broiling in this recipe.

We simply adored this recipe - so easy and so delicious, especially if you can find really fresh large Sea Scallops. We did make one easy addition that took the recipe from the superb to the sublime:

Mash or puree a ripe avocado sprinkle with a little fresh lemon or lime juice and a small pinch of salt (preferably Sea Salt or Kosher Salt. Blend into the Mayo mixture - and Voila! (If you really want to "gild the lily" you can garnish the scallops and lettuce with additional avocado slices and halved grapes or cherry tomatoes. This is a genuinely heavenly dish!

These scallops are fabulous! The spicy mayo is awesome! I made these with king crab legs and roasted red potatoes. The scallops went first. My husband and son where in heaven. Will make this again and again. Thanks Tyler for yet another great recipe!

Someone asked what else can be done with the mayo...I'd suggest using it on fish tacos (fried or grilled, grilled shrimp tacos, chicken sandwiches - use your imagination! You could also thin the recipe with more lime juice and use as a salad dressing over lettuce, fresh corn, black beans, avocado, and left over taco meat or chopped grilled chicken. YUMMY!

If you love spice, you will love this. All of the flavors compliment one another without being over-powering. They all blend together just perfectly.

The bacon adds a smoky flavor to the scallops and the chile-mayo sauce is the best! This dish is good for those who are on a low carb diet

My wife LOVES scallops in bacon. This was the best recipie I have tried. It came out perfect. She did say the side sauce was too hot, but then, she thinks ice is too hot. I thought it was perfect.

We tried this on ourselves before serving to guests. It melts in your mouth - perfect hit Tyler. This spicy mayo is now a new stock item in our refrigerator, we use it in place of regular mayo in almost every situation (bratwurst, sandwiches, etc... Bravo!!

I just tried this recipe tonight for myself and my finicky 20 year old daughter....I used butter lettuce instead of bib lettuce and we BOTH loved it!!! The spicy mayo really is key to this and with the lettuce can be served as a meal!! This will go into my all time faves!! Thanks Tyler!

The spicy mayo was REALLY spicy, but the whole dish was a huge hit at a party I threw.
