    I made this for my husband last night.
    We loved it. He has high cholesterol
    and scallops are already pretty high,
    so I replaced the mayo with six onces plain non fat yogurt and a tablespoon of mayo. It was amazing.

    at first I thought the combo of seafood and mayonnaise would be awful. but I tried it anyway and it was awesome. you could omit the lettuce if you wanted to and it would be just as good. I even made a mango salsa to balance it out just in case the mayo was too spicy.

    This was outstanding served on a bed of baby spinach instead of the lettuce. Easy to prepare and as good as any scallop dinner at a top quality restautant.

    I had to use frozen scallops, as fresh scallops were not available where I was shopping. They worked perfectly and were delicious. I made 40 and they were gone in about 10 minutes.
